Ingredientes
- 1 merluza de 2 kg. (aprox.)
- salsa de pimientos (ver receta)
- salsa vinagreta (ver receta)
- salsa mayonesa (ver receta)
Preparación
- Poner a cocer la merluza entera (sin tripa) en agua fría, a la que se le echará un trozo de cebolla, una ramita de apio, un puerro, una zanahoria, un diente de ajo, unas ramitas de perejil y sal.
- Dejar cocer unos 15/20 minutos a partir de que rompa el hervor. (Estar muy pendientes de que no se pase de cocción, pues resultaría seca e insípida). Tiene que quedar bien jugosa.
- Sacar del agua (*) y dejar enfriar.
- Una vez fria, quitarle la piel y espinas y desmenuzar en trozos no demasiado pequeños. Dejar a la espera.
- Preparar la salsa de pimientos del piquillo
- Preparar la salsa vinagreta
- Preparar la salsa mayonesa
- Echar en un molde la mitad de la salsa de pimientos, la mitad de la salsa vinagreta, la mitad de la salsa mayonesa y la mitad de la merluza que teníamos a la espera.
- Repetir los pasos anteriores con el resto de ingredientes, y acabar poniendo una capa de salsa mayonesa.
- Meter en el frigorífico y servir frio.
(*) El agua de la cocción colado, se puede congelar y aprovechar para sopas de pescado, fondos para arroces, o cualquier preparación con pescado.
